About me

I've been in your shoes. I know what it takes.

... and I know what can go wrong.

I founded Demilhs after spending time working on the ground in UK hospitality in kitchens, behind counters, and on the floor of busy venues, not to mention that I opened my own 2 cafes. I've seen talented, passionate people pour everything into their cafe dream, only to lose profit to a badly designed kitchen, an overpriced menu, or the wrong POS system.

How I started

I’ve always had a passion for coffee. For me, cafés have never just been places to grab a drink they’re places where people meet, ideas are created, friendships are built, and communities come together.

For years, my retirement dream was simple: to leave the UK one day and open a small coffee shop on a beach in Hurghada, Egypt, serving great coffee with an incredible sea view.

While working remotely, I spent almost every day for over a year in my local neighbourhood café, Joy Coffee Bar. It became my office away from home. I loved its beautiful interior, relaxed atmosphere, and the sense of community it had.

During that time, I watched three different management teams come and go. Although the location itself presented some challenges, I could clearly see that the biggest problems weren’t the café—they were the lack of operational experience, ineffective marketing, poor use of social media, and no clear strategy to attract and retain customers.

As someone passionate about hospitality and business, I often shared ideas and advice because I genuinely wanted to see the café succeed.
Unfortunately, things continued to decline.
Eventually, the last manager simply stopped turning up for work, and the café closed its doors.
That’s when I approached the owner—who was also the landlord—and told him that my wife and I wanted to take over the business ourselves.
What had always been a retirement dream suddenly became a real opportunity much sooner than we ever expected.
From day one, we set out to completely transform the business.
We redesigned the customer experience, introduced an exciting new menu, hired the right pâtisserie chef and kitchen chef, and focused on creating original, authentic food made with quality ingredients. Great coffee deserved great food, and we wanted customers to experience both.

Alongside that, we built a strong local presence through social media, community engagement, excellent customer service, and consistent branding. We created an environment where people genuinely wanted to spend time—not just buy a coffee.
The results spoke for themselves.
The café became a thriving local destination with loyal customers, strong word-of-mouth recommendations, and a reputation for quality. We successfully turned the business around and operated it successfully for over a year.

That experience gave me the confidence to go on and open my own café.
But something unexpected happened.
The transformation of Joy Coffee Bar attracted attention throughout the local business community. Café owners, restaurant owners, and entrepreneurs began approaching me, asking how I’d managed to turn the business around and whether I could help them do the same.

Some wanted help rescuing struggling cafés.

Others wanted guidance opening their very first coffee shop or restaurant.

That’s when I realised my passion wasn’t just building my own café—it was helping other people build successful hospitality businesses.
Today, I work with café and restaurant owners to transform their businesses using real-world experience, not just theory.
Whether it’s developing a winning concept, designing menus, introducing profitable new food and drink offerings, hiring the right chefs, baristas and front-of-house team, improving operations, building a powerful social media presence, increasing footfall, improving customer retention, or creating a memorable customer experience, I’ve been there and done it myself.
Everything I recommend has been tested in the real world.
I know the challenges café owners face because I’ve faced them too.
My goal is simple: to help passionate café and restaurant owners build businesses that customers love, teams enjoy working in, and owners are proud to call their own.
